Food Stuff

My pumpkin bread from yesterday seemed pretty popular (new recipe which came with the decorative pan), but I prefer the one on my recipe blog truth be told. But here it is:

Pumpkin Bread
1 16 oz. can pumpkin (plain pumpkin, not pie filling)
1 3/4 c. sugar
2/3 c. vegetable oil
1 tsp. vanilla
4 eggs
3 c. flour
2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/8 tsp. ground cloves (I used 1 1/2 tsp. pumpkin pie spice in place of the spices)
1/2 c. Craisins or raisins

Heat oven to 350. Grease and flour pan; set aside. In large powl, combine pumpkin, sugar, oil, vanilla and eggs; blend well. Stir in remaining ingredients, except raisins/Craisins. Mix until blended. Stir in raisins/Craisins. Pour batter into prepared pan. Bake for 65 - 75 minutes (large loaf pan(s)) until toothpick inserted comes out clean. Cool in pan 10 minutes; remove from pan and cool completely.

(This makes a lot of batter. Don't fill your pans beyond 3/4 full. Bake for a shorter time if you're using smaller loaf pans.)
