Homecoming

Matt (youngest son) is home for the holidays as of today. Yeah! He'll be home until 1/11 except for a few trips back to school for band activities. From the amount of stuff he brought home, you'd think he was home for the summer. :-) Eric comes home on Wednesday, after spending the next 4 days in Paris. I can't wait to see him.

Last night was the RTC board potluck at Laura Lenz and Todd Rowekamp's home. Lots of food and fun. A good time was had by all. After a glass of wine, I even donned a hot pink supermodel wig (to be worn at the Polar Plunge). :-) I omitted that photo from the slideshow ...



Mike Schmitt brought pea soup last evening. It was delicious. I also like split pea soup, but this has a fresher, brighter flavor. Easy, quick and delicious! Thanks for sharing the recipe, Mike.

Fresh Pea Soup
4 servings – 2/3 cup

2 cups vegetable stock
3 cups frozen peas
2 tablespoon balsamic vinegar
Salt and pepper
2 teaspoons Olive oil
4 teaspoons Parmesan cheese

1) Warm the stock over medium to low heat in a saucepan. Add the peas; cook until tender
2) Transfer peas and stock to a blender, and process until smooth, adding the balsamic vinegar toward the end.
3) Pour in a bowl, season with salt and pepper, and pour a little bit of olive oil on top. (I used ½ t per serving.) Grate or sprinkle some Parmesan cheese over.

Off-Season Striders: 7:30 AM Saturday at Running Room to preview the Lace-Up half marathon course. Temps are supposed to rise into the mid-20's overnight. Good running weather.
