
I'm going to spend the afternoon in the kitchen (we need cookies after all!), so don't have much time for a post. Here's supper, which will also be the January Running Room eMagazine recipe:
Wild Rice Soup
3 Tbsp. butter
1/4 c. minced onion
1/4 c. flour
4 c. chicken broth
2 c. cooked wild rice
1 c. chopped, cooked chicken (or 2/3 c. minced ham)
1/4 c. chopped celery
2 carrots, finely grated
1 1/2 c. fat-free half and half
2 Tbsp. sherry
3 Tbsp. sliced almonds
Melt butter in saucepan; saute onion until tender. Blend in flour and gradually add chicken broth. Cook, stirring constantly until mixture thickens slightly. Stir in rice, chicken or ham, celery and carrot; simmer about 10 minutes. Blend in half & half, sherry and almonds. Heat to serving temperature.
