Saturday Snapshot

Nice run this morning, but my legs are now certifiably SHOT!! I ran 1.5 early with Mary, Marilee and Tom (speedsters to be sure!) then 7.3 with the rest of the group. Stayed to chat at Dunn Bros. then went home and ran whatever to bring the total to 13.51. When I finally got home I was soooo hungry I felt like having a no-carb-left-behind-free-for-all-rampage-through-the-kitchen (my thinking was "a calorie burned is a calorie earned"!), but didn't. I did have 5 vinegar & salt potato chips and a piece of chocolate and then a nice big bowl of oatmeal with walnuts and raspberries on top. Yum. Double yum.

There was a story and photo in the P-B last night about grooming trails for cross county skiing locally. The Rochester Active Sports Club has done an awesome job of fundraising for the trail development and grooming equipment and they donate many, many hours to develop, maintain and groom the trails for the public. Kudos!!

Think I'll post a recipe today. It's for Brussels Sprouts. No groaning!! They're actually very good if not boiled to death. I made them for Christmas and they're fabulous.

2 tsp. butter
1 cup chopped onion
4 garlic cloves, thinly sliced (I pressed them)
8 cups halved and thinly sliced Brussels sprouts (about 1 1/2 pounds)
1/2 c. fat-free, less-sodium chicken broth
1 1/2 Tbsp. sugar (I used quite a bit less)
1/2 tsp. salt
8 tsp. coarsely chopped pecans, toasted
(I also used some balsamic vinegar with the chicken broth)

Melt butter in a large nonstick skillet over medium-high heat. Add onion and garlic; saute 4 minutes or until lightly browned. Stir in Brussels sprouts; saute 2 minutes. Add broth and sugar; cook 5 minutes or until liquid almost evaporates, stirring frequently. Stir in salt. Sprinkle with pecans. Delish!!
